Cinnamon Banana Nut Muffins



Some of the tasty muffins to make with overripe bananas are Cinnamon Banana Walnut Muffins. They are full of banana cinnamon flavor and have the right bit of nuttiness while being moist and tender in texture. These delicious treats are easy to make and quick to bake. Best of all, you can add chocolate chips to them if you want to make them extra delicious. 

Ingredients

3 Ripe Bananas Mashed Up
5 Tablespoons of Melted Butter
2 Eggs
¾ Cup of Sugar
Teaspoon of Cinnamon
Pinch of Salt
Pinch of Nutmeg
¼ Teaspoon of Vanilla Extract
¼ Teaspoon of Baking Soda
1 Teaspoon of Baking Powder
1 ¾ Cups of All Purpose Flour
1 ½ cups of Chopped Walnuts
¼ cup of Oats
Cinnamon Sugar


Instructions 
1. Pre-heat oven to 350 degrees and line a muffin pan with liners. (If you do not have a muffin pan, you can use this recipe to make bread instead.)

2. Mash up the 3 ripe bananas in a large bowl.

3. Add the 2 eggs, ¾ cup of sugar, teaspoon of cinnamon, the pinches of salt and nutmeg and vanilla extract into the bowl with the bananas and combine these ingredients together with a spoon or hand mixer.

4. Add the ¼ teaspoon of baking soda, 1 teaspoon of baking powder and 1 ¾ cup of flour into the mixture in the bowl and combine this into it until you get a banana batter.

5. Add in a cup of your walnuts and set the rest aside to sprinkle on top of the muffins later. Now, combine the nuts into the banana batter. (This would also be the time you would add in your chocolate chips if you so desire to do so.)

6. Scoop the muffin batter into the muffin lined pan filling each muffin cup up evenly. You should get a dozen muffins out of one batch of batter.

7. Sprinkle the rest of your chopped walnuts on top of the muffins along with the oats and some cinnamon sugar before baking them off.

8. Bake the muffins in the 350-degree oven for about 25 to 30 minutes or until you can stick a toothpick in the center of them and have it come out clean. Do not over cook the muffins or they will become stiff and chewy. Just lightly bake them until they are golden brown and tender.

9. Once the muffins are ready, remove them from the oven and allow them to cool in the pan for 10-minutes before removing them from the pan onto a cooling wrack.

10. Serve the muffins up slightly warm with cinnamon or regular butter for a tasty treat.
